Asian-inspired chicken burgers

Asian spices and foods are a regular inspiration, having travelled in the region many times. Although build your burger is both fun and tasty, these Asian-inspired burgers are healthier and just as easy and quick to make. Try them as a main course with salad/veggies, or make mini versions as a starter to impress your friends.


Chicken burgers with lime sauce

Serves: 2-4 as a main course, 2 if you are hungry/4 if it's a light lunch; you could also make mini-burgers as a starter – these will cook quicker as they will be smaller; serve the lime sauce in a bowl on the side

Time to prepare/cook: Approximately 15 to 20 minutes, 10 to prepare; 10 to cook the burgers

 

Ingredients for the burgers

  • 300g minced chicken

  • I medium spring onion

  • 1 teaspoon crushed garlic, or 1 garlic cloves chopped finely

  • 3 tablespoons chopped fresh coriander

  • 2 cm grated fresh ginger

  • Handful of finely chopped Chinese leaves if available

  • Juice of 1/2 lime

  • Splash of soy sauce

  • 1 tablespoon sesame oil for the burger mix and 2 tablespoons for frying – use olive oil if you don’t have sesame oil

  • Pots & pans needed: Mixing bowl, large frying pan, plate to put prepared burgers on, sharp knife for chopping, spatulas for cooking

Ingredients for the lime sauce

  • Juice of 1/2 lime

  • 6 tablespoons of natural yoghurt or crème fraiche

  • Ground pepper

Method

  • Chop the onion, garlic (if cloves not crushed), coriander and Chinese leaves finely; grate the ginger (use a cheese grater)

  • Put all the ingredients into the mixing bowl and mix thoroughly

  • Now the messy bit 😊 Divide the mixture into 4 and shape each into a ball and flatten to 1-2 cm thick, placing each on the plate ready for cooking

  • Splash a little sesame oil into the frying pan and warm it up (medium-high heat, 6 on a scale of 1 to 9)

  • Cook the burgers for 4 to 5 minutes on each side, until they are cooked through (chicken should always be completely cooked unlike red meat)

  • While the burgers are cooking, in a small bowl, combine the natural yoghurt/creme fraiche, add half the lime juice, 10 grinds of the pepper and mix well; taste and add more lime juice to taste
