Simple salsa

Mexican food is a favourite in our house. So for a lack of local Mexican restaurants, we started making the foods we loved ourselves, with some trials and errors along the way, as authentic Mexican ingredients (who knew there were that many types of chillis?) are hard to come by in Europe. The recipes we use are adapted to the ingredients we can get, and you will probably have to adapt them too, but are still tasty and great for sharing. This simple salsa works well on tacos, or on its own with nacho chips as a starter.

Serves: 4-6 portions as a starter or topping
Time to prepare/cook: Approximately 10 minutes to make, 15 minutes to rest before serving. Lasts 2-3 days in the fridge – if any is left!
Ingredients
3-4 large vine tomatoes
½ red onion or one large spring onion
1 teaspoon crushed garlic
6 slices of jalapeño pepper (from a jar)
2 teaspoons good olive oil
2 teaspoons fresh lime juice
Handful of finely chopped coriander
Salt & pepper (3 turns of salt grinder/6 turns of pepper grinder)
Method
Chop tomatoes, onion and jalapeño finely and put into a serving bowl
Add the olive oil, lime juice, crushed garlic, salt and pepper; mix well
Taste and add more lime juice/salt/pepper if needed
Leave at room temperature for at least 15 minutes before serving to allow the flavours to blend
Serve as a topping for tacos or nacho chips as a starter
