Super simple salads: Rocket and parmesan

Simplicity is great, and incredibly tasty when you have fresh ingredients! Rocket can easily be found washed in a bag in the supermarket, and because it is a spicy flavour a little goes a long way. You can mix it with other baby salad leaves too if you find the flavour too strong.

At home in the summer, I tend to go out and pick it from the garden where the wild rocket seeds itself annually – I did not realize quite how much it did this when I first planted it, so now I no longer actively sow rocket seeds, I just wait to be surprised (not always good) as it pushes up between paving stones or in the flower pots!

Using good olive oil (salad quality) and balsamic vinegar is important too, as this enhances the flavour. This is a great Italian favourite and works as side salad or on top of steak tagliata style.


Serves: 3-4 as a side salad, or as a topping for steak tagliata

Time to prepare/cook: Approximately 5-10 minutes

 

Ingredients

  • 100g of rocket – and other salad greens/lettuce if preferred

  • 30g block of parmesan cheese, sliced very thinly

  • Good olive oil, balsamic vinegar and a twist of pepper to serve


Out-of-control rocket in the garden (well, next to the garden)

Method

  • Ensure the rocket is washed and dried as needed (most bought packs are, but always check)

  • Slice the parmesan as thinly as possible – easy ways include using a potato peeler or a serrated knife

  • Arrange the rocket into a salad bowl and sprinkle the parmesan slices on top

  • Serve with the olive oil, balsamic and a pepper mill on the table so people can dress to their own taste

  • Et voilà! Done!
