Super simple salads: Tomato & red onion

The tomatoes in Portugal somehow seem tastier than in Switzerland – perhaps because they are grown here so fresher. While I do grow some of my own in the summer, and these have a wonderful taste, I know most of us have to depend on the local store so find the tastiest tomatoes you can. I often use baby vine tomatoes and Italian style (pear shaped) ones. Red onions or spring onions are also a good choice here as they tend to be a bit sweeter than regular white onions.
You can serve this just with good olive oil (salad quality) and a few twists of sea salt, with the option of a few basil leaves for colour and balsamic vinegar if you wish. Just keep it simple! One of the most amazing tomato salads we ever had was in Spain where the flavours were simply amazing – just freshly picked, big vine tomatoes with olive oil and probably far more salt than was healthy! But we still remember it years later!

Serves: 3-4 as a side salad
Time to prepare/cook: Approximately 10-15 minutes
Ingredients
250g of tasty tomatoes – baby or big, your choice
I small to medium red onion or 1 big spring onion
Good olive oil and a twist of sea salt to serve
Optional: A few fresh basil leaves for colour, balsamic vinegar

Method
Wash and chop the tomatoes – quarter baby tomatoes, make round slices of big vine tomatoes
Peel and chop the onion thinly
Mix the onion and tomatoes in a serving bowl, adding a tablespoon of good olive oil and a few twists of sea salt
Wash and roughly tear a few basil leaves to add colour on top
Serve more oil and balsamic vinegar, plus salt and pepper mills, on the table so people can season further if needed
